What is Tokuzo Knives?

"Mori Tokuzo (first generation)" was born in 1854 (Ansei 1).
I started a barrel-making business in Renchi, Tosa Domain (present-day Otesuji, Kochi City, Kochi Prefecture).

While staying in tune with the times, we discern what people need.
We have slowly evolved our business model over generations. Currently, we are a company involved in the traditional industry of Tosa cutlery.
It is about remembering the techniques that have been passed down and the people who use them, and the spirit that resides in the object, "being close to the user and the knife."

I cherish it.

The people who use them, their purposes, and their lifestyles—everything changes quietly day by day.

Each time you pick it up, it becomes a little more familiar.

We grow together, and we spend our time together.

We deliver indispensable "tools" for everyday life.

Blacksmithing

Over the years, we have evolved with the changing times, carefully identifying what people need and adapting the way we do business, while carrying our legacy forward from one generation to the next.

Namba store

Today, as a company dedicated to Tosa Uchihamono, a traditional Japanese craft, we cherish the skills passed down through generations, our consideration for those who use our knives, and the spirit embodied in each piece.

Above all, we value the idea of being close to both the person who uses the knife and the knife itself.

The people who use our knives, the ways they are used, and the lives they become a part of are all quietly changing with each passing day.

With every use, a knife gradually becomes familiar in your hand, growing and aging alongside you.

We strive to provide tools that become an irreplaceable part of everyday life—tools that grow with you and accompany you through the years.

During the Edo period, the tradition of forging blades expanded into the making of agricultural tools and everyday implements.

This tradition, passed down for more than 400 years,
continues today in the Tosa Forged Blades we make.

Voices from Those Who Use Our Knives

We spoke with chefs who work with their knives every day, about their relationship with knives as tools and what they have come to feel through their work.
