The ever-evolving sharpening process

Myojin Riki Seisakusho has its workshop in Susaki City, Kochi Prefecture.
Naohito Myojin is the second-generation owner and the craftsman responsible for sharpening.
He began his education in blacksmithing at the age of 18 and subsequently pursued a career as a knife sharpener.
He refined his skills under the guidance of his father, the founder of the business, and subsequently underwent additional training in Fukui Prefecture, mastering the "hamaguri-ba" technique.
Since that time, he has maintained his visits to knife sharpeners across the country, exchanging techniques and honing his skills.
He continues to attentively consider user feedback, and his commitment to making continuous improvements remains unwavering.
The blade tip is given a slight roundness, and the balance between thinness and thickness is meticulously adjusted.
The knives produced through this sharpening process are renowned for their ability to effortlessly cut through ingredients, offering a seamless combination of sharpness and ease of use.
The knives he crafts are highly regarded both domestically in Japan and internationally, with their blades continuously improving.
